
The balance of the spice and the evenness of cooking (without overcooking) is a spectacular feature of Zuni's masterpiece. The skin is moist, crispy, and lightly seasoned and golden brown. The bird is organic, the bread steam-ovened, and the lettuce bits raised by loving hands. It's a little hard to swallow a $50 price tag though for a roast chicken, and be prepared for the hour plus wait as well as the fact that you cannot call in and pre-order. You gotta love a roast-chicken nazi though, and fortunately Zuni's bar makes perfect libations to dull the pain and liven up the wait.
Served with a great bread stuffing, this is one of the best chicken dishes in the country.
