
Fina Puidgevall's country inn and restaurant in her remade 14th century Spanish farm house a few hours outside of Barcelona boasts some of the best cooking I have ever had the privilege to taste. Her crew, spearheaded by El Bulli alum Pere Planaguma does star turns in a small town that should be on everyones list of must go hot spots. Fina and Pere take rooster combs from the flock that patrols the farm on which the inn sits (it provides most of the food for the inn) braise them, and cook a killer risotto simply enriched with fresh broth and the braising liquid from the combs, some of which are chopped, some left whole, in the rice itself. Simple, and beyond sticky-rich good.
