
Uchi...What is there not to like? As far as choosing a favorite dish, it's like having to pick your favorite contestant from the finalists at a beauty pageant. Japanese red snapper is a fave. It’s the daddy of red snapper. I love our local snapper. As a matter of fact, I get if fresh every week from the coast for a Huachinango Veracruzano taco special, but the Japanese stuff is like butter!
