
Patricia Quintana is one of the best cooks in the world, an accomplished chef, author, business woman, novelist, historian and one of the all time great ladies in our global food world. Yes, I have a huge crush on her. At her Mexico City headquarters the duck enchiladas are her signature dish. Roasted duck is shredded and cooked a second time, then sauced with her Oaxacan mole that is so deep, so perfectly tuned, so balanced and nuanced that you can taste every one of it's 4000 ingredients. Then this filling is folded into small corn tortillas that are fresh off the comal, and served, crowned wiht some paper thin raw onion soaked in ice water. F***ing amazing.
