
Emily Fleming-Nash, proprietor of Emerald City Press, introduces Austinites to what many don't know they've been missing: the Espresso Soft Serve.
This "dish/drink" is essentially a combination of a shot of fair trade organic Katz' espresso served atop organic soft serve ice cream, with your choice of syrup (chocolate, hazlenut, vanilla, blood orange, etc.) whipped cream, and a dusting of espresso beans.
Emily experimented with a plethora of ingredients to get her organic soft serve just right - almond milk, whipping cream, skim milk, evaporated cane sugar, and organic brown sugar to name just a few. She even had to buy something called a refractometer, an optical instrument used to determine the refractive index of a substance (in this case, sugar).
